Palm Candy is a naturally crystallised traditional sweetener derived from the sap tapped from the inflorescence (flower bunches) of the Palmyra Palm. Prepared through time-honoured methods practiced for generations, Palm Candy is processed without chemical refining, bleaching, or artificial additives, ensuring that its natural minerals, vitamins, and cooling properties remain intact.
Unlike refined white sugar, Palm Candy has a low glycaemic index of approximately 35, which helps prevent sudden spikes in blood sugar levels. Making Process:
Sap Tapping from Palmyra Palm
Fresh sap is carefully tapped from the inflorescence (flower bunches) of mature Palmyra palm trees using traditional techniques.
Heating and Concentration
The collected sap is gently heated and boiled over controlled fire until it thickens into a pulp-like consistency. This slow heating preserves the sap’s natural nutrients and sweetness.
Wooden Container Crystallisation
The concentrated sap is poured into specially crafted wooden containers fitted with threads stretched from end to end. These threads act as natural nucleation points for crystal formation.
Underground Natural Maturation
The sealed wooden containers are placed underground for a period of 3 to 4 months, allowing gradual cooling and natural crystallisation without disturbance.
Crystal Formation and Grading
During this period, the sap transforms into palm candy crystals of varying sizes.
- Premium-grade crystals are larger, clearer, and naturally sweeter.
- Smaller crystals are milder in sweetness.
- Due to their superior sweetness, texture, and rarity, our larger crystals are considered first quality and are comparatively more valuable.
Final Drying and Packaging
